Gluten-free soy sauce
Tamari shoyu is ordinarily made solely of soybeans, but nowadays it has become popular to add a small quantity of wheat as an ingredient. Yamakawa Jozo also used to use wheat, until one day the brewer was inspired to “go back to basics” and developed NAGARA, which is made from Japanese soybeans, Japanese salt and water, and is therefore gluten-free.
Fermented and brewed in KIOKE
Wooden barrels called "KIOKE" are essential for making our tamari soy sauce. Kioke can be used for over 100 years. During the 100 years it has been in use, a unique microbial ecosystem has developed inside these Kioke. Fermentation occurs by microorganisms naturally occurring in the Kikoke. Each brewery’s “ecosystem” is different. Nagara is fermented and brewed in the Kioke for two years. It has the deepest umami than other soy sauces dueto the protein-rich ingredients and two-year aiding.
